There must be over a million recipe and cooking websites out there on the world wide web. Unfortunately, most of them aren’t worth the content management platform they’re published on. Simply because most of them can’t be recreated in the average kitchen by the average human being. Lisa Fein’s now world-renowned blog, The Homesick Texan, however, is not one of those.
A biscuit by any other name…
That being said, I need to clarify a little something about this recipe right away. Before you rush off to make yourself a pot of tea to go with these biscuits, let’s (re)define what a biscuit is.
In most of the world, biscuits are crisp bites of sugary, buttery goodness that we dunk into a hot beverage and nibble on. In the American South in particular, bless them, biscuits are fluffy, savory baked goods that you would typically have with chicken and gravy. Call them what you will, they are delicious with any gravy or stew. Sink your teeth into a gravy-covered biscuit and you’ll understand why this Texan was so homesick.
Though biscuits are incredibly easy to make, I spent years searching for a recipe. As my search progressed, the recipes became more complex and convoluted. After trying this recipe, and sticking to it, I honestly don’t see what all the fuss was about.

But before you set out to make these biscuits and if you’re not currently living and grocery shopping along the southern border of the United States, please note the differences in some of the ingredients. Butter tends to be very different from one continent to the next. Flour has different names in different countries and you must get your flour right for southern biscuits.
